Recipe: Roasted Green Beans and Fresh Tomato

I'm making this tonight!

Roasted Green Beans and Fresh Tomato

Preparation Time: 12 min
Cooking Time: 15 min
Level of Difficulty: Easy

Ingredients
3 spray(s) olive oil cooking spray
4 cup(s) green snap beans, trimmed
2 cup(s) grape tomatoes, or cherry tomatoes, cut in half (or quartered, if large)
1/4 cup(s) basil, fresh, cut into ribbons, divided
2 tsp minced garlic, or less to taste
1/2 tsp table salt, or more to taste
1/4 tsp black pepper, freshly ground, or more to taste
Instructions

* Preheat oven to 450ºF. Coat a large roasting pan with cooking spray.
* Place green beans in a single layer in prepared pan and coat with cooking spray. Roast until desired doneness, stirring once or twice, about 10 to 15 minutes.
* Meanwhile, in a medium bowl, combine tomatoes, 2 tablespoons of basil, garlic, salt and pepper; set aside.
* When green beans are finished, remove from oven and spoon tomato mixture into pan; toss thoroughly. Serve hot, room temperature or chilled, topped with remaining 2 tablespoons of basil. Yields about 1 cup per serving, 4 servings.

Pita "Pizza" Recipe

I can't believe I haven't posted this recipe. I've been eating it for a week since I thought to make it. It's absolutely delicious and simple to make. I'm having it for dinner tonight! (the picture is from two days ago).

Ingredients
1 whole wheat pita separated in two (1)
1/4 cup pizza sauce (1) (use less or skip if you want less points)
2 ounces of fat free feta cheese (1)
1 red onion
1 red pepper
1 large white mushroom
1 teaspoon olive oil (1)

Directions
Fry up the onion, red pepper, mushroom with the olive oil and spices to taste (I like basil) and at the end (and out of the fire) put in the cheese.

Separately, put the pitas in a frying pan (no oil or anything) and let them get crispy but not burnt. Pour pizza sauce on top, then pour the veggies.

Slow Cooker Rocks!

I love my slow cooker. Today I made a modified chili that I found in this Cooking Light Slow Cooker book.

The recipe is simple: 1.5 pounds of 95% fat free ground beef, cooked with lots of chili pepper, red pepper flakes and this hungarian hot sauce thing from Hungary (to taste). Then thrown in the slow cooker with 1 sliced raw red onions, 4 stalks of celery (sliced), canned kidney beans (1 big can, I think 30 ounces or so, like two small ones) and canned tomatoes (2-14.5 ounce cans).

The recipe builder said 2 points per cup serving. It's delicious!
